And so it ends...

This year was a great Tour year. It was exciting and a great year to watch. But I think this year I had so much going on that I'm kinda glad that it's over. (Did I just say that?!? That may be cycling blasphemy...) I think it all boils down to attempting to get things done! And that doesn't happen during the Tour. I wake up, watch the Tour, get ready, go to work, get home, and clean? So not my ideal!

Thankfully, the Tour in all its glory only lasts for 3 weeks. Now I can get my act together and get this house clean before I start school right? Maybe...? I don't know what happened to my motivation! But there's always tomorrow. Plus going into work early kinda kicked my butt too...

Here's to the rest of the week and having the weekend off!

Now I need to find my planner so that I can jot down my little to do list for tomorrow.... Just 6 little things that I need/want to accomplish tomorrow! Now what happened to it?

Recipes: Chicken Stir Fry

This is one of my favorite dishes to make! I love it!

Before I start I should inform you that I rarely use measuring cups when I cook. Unless it is something from another recipe. So if some of the measurements don't work I apologize in advance, but for this recipe measurements aren't super important.

2-3 boneless skinless Chicken breasts, cubed
2 Broccoli crowns, stems removes
1 Zucchini, chopped
1 Yellow Squash, chopped
1.5 cups Mushrooms, chopped (I use baby bellas)
1 cup Edamame, shelled
1 cup Carrots, chopped
2 cups low sodium chicken broth
4 tablespoons olive oil, divided
1 heaping teaspoon cornstarch in just enough water (or broth) to dissolve
Splash Soy sauce (until desired taste is achieved)
dash cayenne
dash paprika

Also cook some rice (we use brown rice and cook large batched to use throughout the week)

1) Chop up all vegetables and chicken beforehand. You want all of the pieces to be bite sized.
2) Season chicken with cayenne and paprika
3) Heat half of the oil in wok over medium head. Add chicken and stir until cooked through.
4)Remove chicken from wok. Add remainder of oil. Add carrots and cook for about 3 minutes. Add broccoli and cook for an addition 2 minutes. Add zucchini, yellow squash, mushrooms, and edamame. Cook for aprox 5 more minutes. (Continue to stir while these items cook to keep everything evenly cooked)
5) Add chicken broth and chicken. Allow broth to come to a boil, while continuing to stir. Add cornstarch mixture and stir. (More cornstarch and/or broth can be added to reach desired thickness and amount of starch)
6) Add soy sauce to taste.
7)Continue to cook until thoroughly cooked. (Vegetables should not be soggy)

*I add the veggies in at different times so that the carrots are cooked, but the squash and zucchini aren't soggy.

Serve over rice and enjoy.

Yields: aprox 6 servings

To make it even tastier, but a little less healthy you can replace the soy sauce for Huli-Huli Sauce. It's quite tasty, but since it's made with sugar among other things.

What a day!!!

Thank goodness for rest days! And I'm not talking rest about a rest day for me, but a Tour de France rest day! Today they weren't racing so there was nothing to watch! Plus it was my holiday day today (I worked the 4th so I was able to get today off in it's place). And what a productive day it was!

I got up around 7am and was at Firestone before 8am to get my oil changed. Unfortunately, I spent about 2 hours there just waiting and reading (thank goodness for my Kindle). Then I went back home and worked out a bit, and a shower later I was back out shopping for groceries and a cook book (one of those you fill in yourself. It's going to come in so handy for recipes we love that I know but my husband doesn't, or ones that I have found on line that are amazing, but hate having to bring my laptop into the kitchen.)

When I got back home and started cooking dinner for the entire week. I have wanted to attempt this since I started working the evening shift. And we'll see how it goes. I ended cooking for about two hours, which really isn't bad. I also ended up sweating profusely, but what else can you expect when you have the oven and stove going for two hours...

On top of that I cleaned the fridge (scrubbed and trashed the gross and old things) and finished off the laundry that had collected for over a week.

I'm pretty darn proud of myself. I wish everyday could be this productive, but not until next week. And hopefully Andy Schleck will be in Yellow by the end of this week!

It's days like today that I go to bed satisfied feeling like it was a great day. Not days when I sit around being lazy. Here's to many more days like today!

And I should have some recipes to come!

The Tour: I LOVE Mountain Stages!!!

I LOVE cycling, but more than that I LOVE watching Tour de France Mountain stages and today's stage did not disappoint. This year just like last year I am rooting for Andy and Frank Schleck, and man did they kick some butt today! They really showed who was on form and who wasn't and surprise, surprise Contador doesn't seem to be on form, or maybe his best is just not good enough (he won last year due to a mechanical malfunction that Andy Schleck had up a climb.)

I'm excited to see what tomorrow's stage brings!

My Own Kind of Paradise!

We had a bit of a whirlwind mini vacation. On Friday I got off work at 2:30 and we were on the road by 3 (which is quite an accomplishment for us!) We madeit to Crestview, FL in about 8 hours. And we were both very tired and ready to hit the hay, but somehow the hotel lost our reservation (I know, perfect....) The hotel had only one room left and it had no toilet, because the original was being in the process of being replaced. Our options: Take the toilet-less room or get a room at another hotel and the hotel where we had reservations was covering the cost regardless which we chose. Obviously we picked a room with double beds and a toilet over the the King with out, right? Well we would have if we hadn't felt like our lives would be in danger by staying there. (Yep it was that scary) As Tye was inside considering checking in I was searching for the nearest Starbucks, since I was going to hang out at the hotel while he had a meeting.  Needless to say we ended up picking the room without the toilet (there was a toilet in the lobby that we were able to use.)

The next morning I hung out at Starbucks anyway while Tye went to his meeting. I had forgotten my wallet in the car so they gave me my coffee for free (I had only ordered a Grade Coffee anyway.) Then we had lunch and met my parents in Destin for a little beach time! We thoroughly enjoyed our two days even if we were thwarted by seaweed and algae as always seems to be the case when we go to the beach. I can only hope that we can change this trend.

We headed back home on Sunday and had some trouble finding a restaurant for lunch since the ones we wanted to try were closed (one was closed until August, which is just crazy!) We got back home at about 11pm and then I got up for work at 4.

It was quite the weekend but it didn't feel too short, thankfully. And I was glad that I got to see my parent and brothers!

How do I look?

After a bit of research I have figured out how to fix my little issue with the title. I'm not sure that I just love it. It's cure but maybe to "baby". I definitely like it looks better than before. I guess we'll see how long this lasts. It will at least stay up until I find something that I like better!

A few little changes

I quite like the idea of this new template but I want the header in the middle. But I'm out of time and have to get ready for work. I didn't even exercise this morning or really watch the Tour, because I was trying to make this blog look better. Now it just looks weird. Another attempt tonight after the work and the gym.
